Traditional Dark Balsamic Vinegar

Our small batched traditional barrel-aged balsamic vinegar is from Modena, Italy. All of our balsamic is made from the well-matured, cooked must of Lambrusco and Trebbiano grapes. It is aged slowly in fine wooden barrels until it is sweet and dense (with a high density of 1.34). Proper aging produces balsamic vinegar with an outstanding intense aroma and a dense, velvety texture that is surprisingly combined with lightness and just a delicate hint of acidity (4%).
