For some cheese lovers, the more stinky the cheese, the better they love it. For those who adore mushrooms or bitter chocolate, you may prefer these cheeses the most. Some wash rinds cheeses are soaked in brine or spirits and then brushed, creating grooves on top of the rind. In my personal opinion, the rind is really unpleasant for me since it throws the flavor of the inside off. For those who love the funk, go for it! 

 

Wash rind cheeses are great with beer, hearty English dishes like bangers and mash, or heavily flavored German dishes like brats with kraut. Since wash rinds are robust in flavor, remember to bring extra gum if you take some to a party. My recommendations include Epoisse, Mont d'Or, Red Hawk, Pont L'Eveque, and Limburger. If not beer, try a sweet Riesling or a flavorful red like a Burgundy or a Bordeaux.
