Fish lovers, Sumac is your new friend. It’s a multi-tasker, from spicing dishes to natural dyeing. It begins as the blushing plant Rhus, ​with a deep rich crimson-red color. Sumac’s intense lemon flavor means cutting a lemon is unnecessary, but that depends on how tangy you like your sour.  

What dishes use Sumac

Use Sumac when smoking gravlax (smoked salmon). It gives off a beautiful color, a delicious flavor, and an aromatic end product. I use it in my beef kebabs(kufta), lamb, salads, and fish.

How can Sumac change the colors of items? 

Try this beauty in your lemonade to color it from yellow to pink. Japan uses this natural dye to stain its textiles. Its other uses include food dyes like Easter eggs and food garnishes like sprinkling it on deviled eggs.
