Recently in Baking and Pastry class, the Chef showed us bakers, a beautiful handmade grain mill from Germany. I never thought these small contraptions were available to purchase. I figured a grain mill was a giant Dutch windmill moving around slowly or even several miniature donkeys running in circles grinding grains.
With a grain mill, you can grind grains, legumes, and corn into fine powders to accommodate your baking needs. Now, gluten does not have to be the only staple in your pantry. Actual bakers love this contraption since they can adjust the mill to any grind level and concoct their own flours.
What about nuts? And nut butter? Well, this is where I recommend not using a grain mill to make nut butter or superfine nut flour. Nut butter in a food processor is preferred since the oils can clog the milling machine. To make super fine nut flour, a grain mill turns nuts within seconds into nut butter. Nuts produce natural oils, so it can be tricky but not impossible.
I know these machines can be expensive, but to take your baking career to new heights, buy a grain mill to make your custom loaves of bread. It can be a process, but you can make flours for future use and save you dough in the long run.
