Some of my favorite cheeses use buffalo milk. It is an integral part of buffalo camembert, buffalo burrata, and buffalo bergamino. Try it. The flavor is super rich! Italian/Mediterranean Buffaloes are the breeds that make such delicious cheeses, yogurt, ricotta, and many more. The regions of Italy who use buffalo cheese are Campania, Lazio, Molise, and Apulia.
*Buffalo Bergamino. This one is my of my top 5 favorite cheeses. It's a buffalo brick cheese, that tastes between a brie and a semi-soft. It can be sliced and put on sandwiches.

*This is buffalo burrata, which is a thin pocket of mozzarella stuffed with cream and curds.
*Buffalo fresh mozzarella, gently rinse the brine before serving.
What are some similarities and differences between buffalo and cow's milk?
Dairy workers milk both animals throughout the year. Buffalo milk has extra calories, lower cholesterol, and more viscosity and minerals than cow's milk. It has a slighter acidic taste than cow's milk, adding a tad of gaminess.
