Kernel Maize by Rachael Afra

Maize (corn) ground into a fine meal with some added water forms masa (corn dough). Masa is the superstar in tortillas, tamales, pupusas (stuffed tortillas), and many more Latin dishes. Maize was a predominant cereal grain that provided food for several tribes in the Americas. It's fascinating how cultures from different countries have similar influences on the foods we love today. What's your favorite dish to make with masa or maize? I truly enjoy Chicken Tortilla Soup and my sister's posole (pork and vegetable soup made with hominy).
